Well, I think you should use LUKS (Linux Unified Key Setup). The
default encryption is AES 256. This should be safe enough. Afaik you
can set up 10 keys/passwords for the same encryption and it works
under Linux and with an extra tool
(http://www.freeotfe.org/download.html) under Windoze as well. So you
just have to choose a filesystem that works under Linux and Windows.
