Like with many things in the Macintosh world, you're at the mercy of Apple to
deliver the updates.

With respect to the particular updates for Java, it's possible (though I have
no detailed knowledge) that the vulnerabilities don't affect Java running on
Mac OS.  Another possibility is that the fixes have been backported into the
current version without incrementing the actual version number, but looking
at the security update release notes, nothing recent mentions Java at all.

Obviously, another possibility is that Apple just hasn't gotten around to
this yet.  :)
