On the white papers section you will find plenty of information on Honeynets and, among them, configuration of Honeynets using VM (including VMWare).

You will find http://project.honeynet.org/papers/virtual/ an interesting reading, and recently they have also included a white paper (http://project.honeynet.org/papers/uml/) on using ULM (User Mode Linux) to set up a honeynet.

A Honeynet is one step further than a honeypot, but I think most of the ideas would apply anyway...
