Don't worry, you can do many things to drive nmap crazy...

* For example, want to turn your computer into an Apple Color LaserWriter ?
Programs like KOSF or IP Personality will mislead nmap fingerprinting.
* Various other tools exist, you can take a look at a short article
describing a small program called antimap which can respond (in X% of the
cases) to SYN on closed ports with SYN|ACK (for example):

Sorry, it's in french but that should be no problem since it's principaly
composed of technical stuff.

But after all, if you've got something to hide to port scans maybe it's
that you should first review your security infrastructure...

BTW, I'm not sure you have posted in the appropriate mailing list, you
should have tried nmap-hackers (moderated).
