Unfortunately your machine only sends data, it never gets anything back
from the printer.  Service fingerprinting needs to get some set of
bytes back from a probe to do matching.
..
I've read that JetDirect can be used to do things like check printer
status, check paper and ink levels, etc.  Do you have a utility (HP
provided?) that will tell you the status of the printer?  If you could
capture that I think it would go a long way towards improving our
printer detection.

Try this second pcap file. I used a utility called Hi-Jetter to do some of the things you mention above. The PCAP 
should include grabbing environment variables and status. I can get you a specific cap of changing the display text as 
well if that would help. The attached pcap does not actually show any changed data. It just asks for and receives the 
data from the printer.

I would guess the windows version would run under WINE as well but I haven't tested that.
