Yes port knocking is more of the same.  It's not really the right direction to head for a measurable increase in 
security.  In fact port-knocking could potentially be found vulnerable to new attacks. As can devices that try to fake 
every port as being open.

No.  Real security is a lot more scientific.  There is a great list of early publications on the subject here: 
http://csrc.nist.gov/publications/history/index.html.  If you haven't done so, have a read through the Orange Book 
(http://csrc.nist.gov/publications/history/dod85.pdf), and what security evaluation has become in the Common Criteria 
(http://www.commoncriteriaportal.org/).
