Any snmp-based software can handle all of what you describe.  I mean *anything* capable of receiving snmp traps.  Just 
enable snmp on the server(s) you need to log.  Send the traps to your log server.  Any *nix box with the syslog d would 
do fine.  On my dreaded Windoze boxes, I use Kiwi http://www.kiwisyslog.com.  It is free.

I would like to know wich program do you recommend for centralized log
management software for the following platforms:

Windows 2000
Internet Information Server
PCAnywhere
Cisco Routers
Cisco PIX
Microsoft FTP Server
IPSwitch FTP Server

Is there any software that can handle all this? 

Or maybe some software that can be customized, like telling the fields in
the log file....
