A sniffer that I have found particulary useful in this area is Capsa Colasoft:

Having a copy of it might help in studying the network traffic.

Capsa has the best UI of all the sniffers.

I'm busy setting up a test lab with different OS's using VMWare so I can
learn more about breaking into machines as well as preventing the
breakins. Is there any specific software I should have installed on the
Virtual machines that would help. I'm thinking on the lines of software
the pstools, fport, etc.
