Network security Lab Ideas

Hi folks
 I am in charge of building a Cyber Security Lab for our University. I need 
your advice as to what all hardware and software is
recommended for such a Lab The AIM is to give practical exposure to students 
on
all aspects of cryptography, network and Internet Security and introduce 
latest
technologies.
For the theoretical portion of the subject
We follow the book
Cryptography and Network Security by William Stallings

Please suggest eqpt and software to me  as also suggested practicals
