Hi I think this is in general a good way to go, but I would like to advise you against fedora when it comes to virtualization, CentOS maybe a better choice for you as the devs since of F9 have taken Xen support out of the kernel, which means F9 to F10 can only run as a guest not as a host. Also you may look at pfSense as a mikrotik replacement, they have ready to run vmware appliances and it is FreeBSD based... What exactly should your "mail" solution be able to do? "Simple" mail relaying or do you really need this kind of resource intensive collaboration platform? If no, then postfix + any IMAP solution like cyrus-imapd may fix you up?
