MS Office 2007 File Encryption

Question: I know by deafult that MS Office 2007 will encrypt a doc/spreadsheet with 128 bit AES and SHA-1 for hashing. 
You can kick this up to 256 bit with modifications to the registry or thru a domain Group Policy. 

My question is whether we can determine whether the encryption used on a Office 2007 doc/ss is 128 bit (default) or 256 
(modified)? How would you go about it?
