Just read the paper: "Know Your Enemy: Honeynets in Universities" (http://honeynet.org/papers/edu/)
I am currently in the process of deploying a honeynet within the network of a large content-provider (4 million customers). We hope to collect data about attacks that can't be collected with the help of conventional IDS or similar systems (e.g. high-level attacks against web-applications). Probably we publish our results in fall this year :)
