Below are my port scanners/packer sniffers of choice.

Port Scanners:
Nmap:  http://www.insecure.org/nmap

Packet Sniffers
Dsniff comes with a suite of tools (i.e. mailsnarf, msgsnarf, webspy, macof,
etc.).  It's good for sniffing authentication, snmp, web, mail, chat
traffic.
dsniff:  http://naughty.monkey.org/~dugsong/dsniff/

Ngrep
Ngrep recognizes TCP, UDP and ICMP across Ethernet, PPP, SLIP, FDDI, Token
Ring and null interfaces, and understands bpf filter logic in the same
fashion as more common packet sniffing tools, such as tcpdump and snoop.

Ettercap
Ettercap is a multipurpose sniffer/interceptor/logger for switched LAN.
Supports active and passive dissection of many protocols (even ciphered
ones) and includes many feature for network and host analysis.
