Does it run, if you do an:
export DYLD_BIND_AT_LAUNCH=1 

before running nmap? 
(found the hack on: http://lua-users.org/wiki/BuildingModules)

If the above does not solve the problem could you try to configure nmap
with the following flag?

./configure --with-liblua=included
